Chicken is a great protein source that is versatile and easy to prepare, making it a perfect choice for keto-friendly meals. Here are a few delicious keto chicken recipes that you can try:

Keto Chicken Parmesan

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup almond flour
  • 2 eggs
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions:

  1. Preheat the oven to 375 degrees F.
  2. In a shallow dish, mix together the almond flour, grated Parmesan, Italian seasoning, salt, and pepper.
  3. Beat the eggs in a separate shallow dish.
  4. Dip each chicken breast into the beaten eggs, then coat in the almond flour mixture.
  5. Heat a skillet over medium heat and add enough oil to coat the bottom. Cook the chicken for 2-3 minutes on each side, until golden brown.
  6. Remove the chicken from the skillet and place it in a baking dish.
  7. Spread marinara sauce over each chicken breast.
  8. Sprinkle shredded mozzarella cheese over the top of each chicken breast.
  9. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

Keto Chicken and Broccoli

Ingredients:

  • 1 1/2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 head broccoli, cut into florets
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup chicken broth
  • 2 tbsp butter
  • 2 tbsp heavy cream
  • 2 tbsp grated Parmesan cheese

Instructions:

  1. In a large pan, heat the olive oil over medium-high heat. Add the chicken and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is cooked through.
  2. Remove the chicken from the pan and set aside.
  3. In the same pan, add the broccoli and garlic. Cook for about 3-5 minutes, or until the broccoli is tender.
  4. Add the chicken broth, butter, heavy cream and Parmesan cheese to the pan. Stir until the sauce is well combined and heated through.
  5. Add the cooked chicken back to the pan and stir to coat with the sauce.

As an alternative, you can also bake the chicken and broccoli in the oven. Preheat the oven to 375 degrees F. Place the chicken and broccoli on a baking sheet, drizzle with olive oil and season with salt and pepper. Bake for 20-25 minutes or until the chicken is cooked through. While the chicken and broccoli are baking, prepare the sauce in a pan on the stovetop, then toss it with the cooked chicken and broccoli before serving.

Keto Chicken Curry

Ingredients:

  • 4 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 tbsp curry powder
  • 1 tsp cumin powder
  • 1 tsp turmeric powder
  • 1 can of coconut milk
  • 1 cup chicken broth
  • 1 cup diced tomatoes
  • 1 cup diced bell peppers
  • 1 cup diced cauliflower
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions:

  1. In a large pan or Dutch oven, heat some oil over medium-high heat. Add the chicken and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is cooked through. Remove the chicken from the pan and set aside.
  2. In the same pan, add the onion and garlic and cook for 2-3 minutes or until softened.
  3. Add the curry powder, cumin powder, and turmeric powder. Cook for an additional minute.
  4. Add the coconut milk, chicken broth, diced tomatoes, bell peppers and cauliflower to the pan. Stir to combine and bring the mixture to a simmer.
  5. Add the cooked chicken back to the pan and stir to coat with the sauce.
  6. Cook for an additional 10 minutes or until vegetables are tender.
  7. Serve over cauliflower rice or with a side of steamed vegetables and garnish with fresh cilantro if desired.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 8 oz sliced mushrooms
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1/4 cup dry white wine
  • 1/4 cup chicken broth
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Heat the olive oil in a large pan over medium-high heat. Add the chicken and season with salt and pepper. Cook for about 5-7 minutes on each side, or until the chicken is cooked through. Remove the chicken from the pan and set aside.
  2. In the same pan, add the mushrooms, onion, and garlic. Cook for about 5-7 minutes, or until the mushrooms are browned.
  3. Remove the mushroom mixture from the pan and set aside.
  4. In the same pan, add the white wine and chicken broth. Bring to a boil and cook for 2-3 minutes, or until the liquid has reduced by half.
  5. Stir in the butter until melted.
  6. Add the mushroom mixture and cooked chicken back to the pan and stir to coat with the sauce.
  7. Cook for an additional 2-3 minutes, or until heated through.
  8. Garnish with fresh parsley, if desired.

Note: You can also add some heavy cream to the sauce for a richer and creamier texture.

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into thin strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp chilli powder
  • 1 tsp cumin powder
  • 1 tsp paprika powder
  • Salt and pepper to taste
  • Lettuce or low-carb tortillas, for serving
  • Optional toppings: shredded cheese, sour cream, avocado slices, cilantro, lime wedges

Instructions:

  1. In a large bowl, mix together the chilli powder, cumin, paprika, salt, and pepper. Add the chicken strips and toss to coat.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 5-7 minutes, or until cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the bell peppers, onion, and garlic. Cook for about 5-7 minutes, or until the vegetables are tender.
  4. Add the cooked chicken back to the skillet and stir to combine with the vegetables.
  5. Cook for an additional 2-3 minutes, or until heated through.
  6. Serve the chicken and vegetable mixture in lettuce cups or low-carb tortillas, and add your desired toppings.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 4 slices of deli ham
  • 4 slices of Swiss cheese
  • 1/2 cup almond flour
  • 2 eggs
  • 1/4 cup heavy cream
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder

Instructions:

  1. Preheat the oven to 375 degrees F.
  2. Place a slice of deli ham and a slice of Swiss cheese on top of each chicken breast. Roll up the chicken breast and secure it with toothpicks.
  3. In a shallow dish, mix together the almond flour, grated Parmesan, Italian seasoning, garlic powder, salt, and pepper.
  4. In a separate shallow dish, beat the eggs and cream together.
  5. Dip each chicken roll in the egg mixture, then coat in the almond flour mixture.
  6. Place the chicken rolls in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted.
  7. Remove from the oven and let it cool for a few minutes before removing the toothpicks.
  8. Serve and Enjoy your Keto Chicken Cordon Bleu.

Note: You can also bread the chicken rolls with crushed pork rinds or crushed nuts. Also, you can add some Dijon mustard or other herbs for more flavour.
